Parmesan Potato Stacks

Parmesan Potato Stacks

  • 8 large Yukon Gold potatoes
  • 1/4 cup of Parmesan cheese 
  • 1 tbsp melted butter  
  • 1 tsp minced garlic
  • 2 tbsp Parsley
  • Olive Oil  
  • Salt
  • Pepper

Tools

  • Muffin tin  
  • Potato Slicer *optional  

Directions:  

  1. Preheat oven to 375.
  2. Thinly slice potatoes (1/16 in - 1/8 in wide).  
  3. Combine ingredients in one bowl and toss, to ensure seasonings end up on both sides. 
  4. Butter muffin tin. 
  5. Stack potato slices in muffin tins.
  6. Bake 45-60 minutes (until edges are crispy).
